Parsnips are a nutritious root veg and grown so well here in England. We have them most weeks and ths way is one of my favourites and considered more of a treat due to the butter and honey.
Ingredients:
3-4 parnsips
1 tbsp, butter
2 tbsp, honey
Olive Oil
Sea Salt
Preheat oven to 190 Celsius.
Peel and slice 3-4 parsnips.
Mix with olive oil, salt and pepper.
Roast for 20 minutes.
Add 1 tbsp butter and 2 tbsp of honey and mix well. Roast for a further 20-30 minutes until golden brown.
Top with chopped parsley.
They will be crunchy on the outside and soft on the inside.
Perfect with Beef Rib with Roasted Figs, Venison with Red Onion Marmalade, or Creamy Roasted Pheasant.

These look absolutely delicious. My fave way to cook parsnips is by smothering them in a flour, breadcrumb and grated Parmesan mix and then cooking them in the oven until golden brown. To die for!
